The following are some great recipes for seafood and water fowl that friends have shared with us, been handed down from mom, or just created from our own experimentation. Cooking fish can sometimes be daunting, especially if you’ve just come home with 10-50 lbs. These are a few easy recipes that will allow you to really enjoy your catch. We especially like the Chick-Fil-A recipe for nuggets and use it for rock-fish. The nuggets freeze well and make great fish tacos. These are handy to have on hand.
Remember that correctly cooked fish is moist and has a delicate flavor. Properly cooking fish is best determined when the meat has begun to turn from translucent to opaque, or white. At this point it should be firm, moist, and easily flake with a fork. Regardless of your recipe be sure not to over or under cook.
